The Story Behind Vital Cuts

Vital Cuts wasn’t born out of a grand vision or a perfectly laid-out plan. It started on a summer night in July 2023, with me—just a student—feeling the weight of a decision. Corporate life or the family business? Neither felt completely right, but I knew there had to be a better path.

My perspective has been shaped by contrast. Summers spent on a farm in Greece with my grandparents, tending to rabbits, chickens, and grapevines. A suburban upbringing where my mother prioritized real, whole foods and questioned everything about what the food industry was feeding us. And now, living in the city, I see firsthand the struggle of finding clean, trustworthy food in an urban environment.

That contrast is what sparked Vital Cuts. The disconnect between people and their food—between quality and accessibility—was impossible to ignore. I wasn’t trying to be a disruptor or follow a trend. I just wanted to create something that made sense.

Of course, not everyone saw it that way. The doubts came in every form, but none of it changed the simple fact that this idea was worth pursuing.

Why we do what we do

Food should be simple—clean, healthy, and accessible. But over the years, the industry has made it anything but. What started as a way to extend shelf life for military rations after World War II has turned into a system built on preservatives, chemicals, and profit over quality.

The consequences are everywhere. Rising rates of diabetes [1], cancer [2], and mental health issues [3]. Half of American children will be classified as obese when they turn into adults [4]. The food industry has engineered addiction, and we’re all paying the price.

Even fast food—once the go-to for convenience and affordability—is no longer cheap. Meanwhile, small farmers, the ones growing real food the right way, struggle to get the recognition and reach they deserve. That’s where Vital Cuts comes in.

I created this platform because I needed it myself. Moving into my first apartment for college, I realized I had no idea where to find real, quality food. My mom wasn’t there to fill the fridge, and when I looked for a place that connected people directly to trusted farmers, I came up empty. So I built it.
